I don't usually think to make beets.
It's not that I dislike them. And I know they are good for you.
But...they carry this feeling or connotation of "hassle".
Maybe it's an improperly assigned association.
Perhaps I was too hasty in my judgement.
Last weeks' organic veggie box came with golden beets.
And, well, everyone deserves a second chance, right?
The weather doesn't though:
Thank god it all melted quickly.
Back to the beets: Yum. Yum yum yummy.
I simply scrubbed, chopped, and steamed these bad boys (about 15 mins), and they were delicious.
Golden Beets steamed and served with lemon juice.
Brown rice cooked with wakame.
Oven-roasted butternut squash.
Steamed carrots & Daikon.
Served with a heaping spoon of tamari-roasted pumpkin seeds, for the man!
